Slow Cooker Chicken Tortilla Soup

I love this recipe from Allrecipes.com… you throw all of the ingredients in the slow cooker and just let it go to town. It’s perfect for a mexican fix when you need it (which for me is often!). Roswell said this was best thing I’ve made since we’ve been together. Yum! Hope you enjoy!


Ingredients
1 pound shredded, cooked chicken
1 (15 ounce) can whole peeled tomatoes, mashed
1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers
2 cloves garlic, minced
2 cups water
1 (14.5 ounce) can chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 ounce) package frozen corn
1 tablespoon chopped cilantro
7 corn tortillas
vegetable oil



Directions
1. Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.

2. Preheat oven to 400 degrees F (200 degrees C).
3. Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
4. Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup. [I prefer to garnish with shredded cheese, sour cream, avocado, cliantro, etc. Use whatever you like!]

Cherry Blossom Season

Last Sunday, April 11th, marked the closing of the National Cherry Blossom Festival, the “annual two-week event that celebrates springtime in Washington, DC as well as the 1912 gift of the cherry blossom trees and the enduring friendship between the people of the United States and Japan.” I made it downtown only one day to take a look at the blossoms and, as usual, they were beautiful. If only there weren’t so many tourists.

Ahh… I missed Friday again. I never wanted to this blog to be something I felt I needed to do. It’s supposed to be fun. So I’m not going to get mad at myself for not posting or missing day. So there.
So how was your weekend? I’ve been getting ready for a big event in my sorority – our annual International Reunion Day – and spent a while this weekend getting things together for the event on the 17th. I haven’t put my whole heart into the event and have been letting myself down a little bit. But as with this blog, I’m supposed to be doing this because I enjoy it, and the minute it feels like it’s overwhelming, I need to take a step back. It’s a little hard to do that with an event coming up and then the fact that next month, I’ll be installed as President. But today, at our last committee meeting, I was reminded of the fun that I could have and it definitely helped my mood about the whole thing. Anyway, much longer post than I anticpated. Not too many photos from this weekend, but I hope you enjoy!

Balcony Makeover

Blooming Tree by our balcony We moved into our apartment at the end of January. And then came snowpocalypse. And we were buried under 30+ inches of snow. It’s finally melted away and it’s finally beginning to feel like spring (or rather summer with the upper 80 degree weather yesterday.) We have a fairly nice balcony with our apartment – we are on the back of the apartment complex and face a nice forest of bamboo from the neighbors behind us. We even have a lovely blooming tree that’s been smelling spring like.
But, of course, that has me wanting to decorate and design the perfect chill balcony for Roswell & I. Here are the befores:

So straight away – off to IKEA. Well, when we got there, all of their furniture (minus the items that we clearly could not afford) was just not comfortable. The one table and chairs set we fell in love with on the website, was just not what we were looking for as someplace to chill. So I’m off in my quest to design the perfect chill space for R and I – I’ll keep you updated as I go. :)
